Red Potato Recipes - Easy Potato Recipes

I love red potatoes because they are so versatile, not mention all the vitamins that go into your meal when you add the red potato as a side dish. The white potato itself, red skin or otherwise, boasts almost half the daily requirement of vitamin C and over 600 mg of potassium. One of the big questions when preparing potatoes is always the same "To peel or not to peel?" The choice is totally up to you, but if you eat potatoes with the skin on you are adding about 2 grams of fiber per serving. Mom would be so proud! Just remember to hold the potato under cool water while using a vegetable brush to clean the skin really well before cooking. Below are a few of my favorite red potato recipes and I have even added a couple of variations.

Easy Steak Fries:
*preheat your oven to 350 degrees
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes and pat dry
*cut each potato into 4 wedges
*place in a large bowl and drizzle generously with olive oil, salt and pepper
*toss to make sure all potatoes are coated well
*for easy clean up line a cookie sheet with parchment or wax paper
*place potatoes on paper-lined cookie sheet for about 20 minutes, then turn and cook an additional 15-20 minutes.
*Potatoes are done when they are firm to the touch and start to brown.
*Serve with ketchup or your favorite dip

\"Pie Recipe\"

(variation) instead of salt and pepper use fresh or ground rosemary

Red Potato Recipes - Easy Potato Recipes

Yummy Mashed Potatoes
*In a 2 1/2 to 3 qt pot fill with enough water to cover the potatoes about 2 inches
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes
*quarter potatoes and then cut each quarter in half (you should have chunks of potatoes)
*boil potatoes on medium-high until tender, then drain water (about 20 minutes)
*put potatoes back on a very low fire
*use a potato masher to smash the potatoes, then stir with a whisk, or fork or hand mixer
--FOR EVERY 6 POTATOES
*add about 1 teaspoon butter, and 1 tablespoon milk
*season with salt, pepper to taste and stir well

(variation) - add about 1 tablespoon sour cream for every 6 potatoes
(variation) - add about 1/8 cup cheese for every 6 potatoes-whatever kind you like, cheddar, american, colby...
(variation) - add about 1/2 clove garlic for every 6 potatoes and put the garlic in the pot when you first put the potatoes in

The possibilities are endless with red potato recipes and that is the good thing. There is very little stress. If you are in a hurry when trying these red potato recipes, just skip the skinning process. Give them a good scrub and start cooking. Keep them on-hand for a quick, nutritious meal anytime, day or night.

Two Easy Recipes Using Small Frozen Shrimp

Many people wonder shat is the best way to cook frozen shrimp. It is very simple, really; all you have to do is take the frozen shrimp out of the freezer the day before, place it in a bowl and put it in the fridge overnight. Your shrimp will be completely defrosted the day after.

The way you cook frozen shrimp is no different to the way you would cook it from fresh. In fact, there is a very good chance that the fresh shrimp you bought at the store has already been frozen, as seafood (particularly shrimp) freezes really well.

\"fish Pie\"

In some cases, it is not necessary to de-freeze your shrimp if it is small enough. Small shrimp is really useful to add flavor to certain dishes (like the recipes listed below) and will cook easily once it hits the heat. Make sure you wash it before adding it to the recipes!

Shrimp and Fish Pie

500g frozen shrimp
1kg frozen mixed chunky vegetables
520g white fish fillets
4 baking potatoes
500g salmon fillets
40g instant parsley sauce mix

1. Defrost half a 1kg packer of mixed vegetables for around 20 or 30 minutes and drain. Peel the potatoes cut into quarters and boil for 20 minutes or until soft.

2. Place the shrimp and fish in a pan, cover with milk and simmer for 15 minutes. Make up a 40gr packet of instant parsley sauce, following pack instructions.

3. Drain the fish and shrimp, reserving some of the milk. Flake the fish into pieces. Add the fish pieces, small shrimp and the defrosted vegetables into the parsley sauce. Season well and tip the mixture into an ovenproof dish. Drain and mash the potatoes with the milk. Spread over the fish, shrimp and vegetables and bake in a preheated oven at 200 degrees C, gas mark 6.

4. Cook the rest of the vegetables from frozen, following pack instructions and serve on the side.

Shrimp and Salmon Risotto

120g frozen shrimp
200g smoked salmon trimmings
1 medium onion
1 lemon
225g French beans
500g risotto rice

1. Chop the onion finely and fry in a tablespoon of olive oil over a medium heat for around 5 minutes or until softened.

2. Pour 1liter of vegetable stock, made up using two and a half stock cubes, into a separate large saucepan and heat gently.

3. Add the risotto rice to the onion and stir for 1 or 2 minutes until the rice is fully coated.

4. Gradually add the stock to the rice, allowing the rice to absorb each ladle of liquid before adding more. After 15 minutes, add the French beans, the smoked salmon trimmings and the shrimp. Stir for another 5 minutes. Add the juice and zest of the lemon and season with black pepper.

The dish is ready to be served!

Dutch Oven Campfire Recipes - The Devil's Cherry Cobbler

It is your turn to do the campfire cooking on this weekend's outdoor camping trip and you have all of your campfire recipes laid out, trying to decide which ones to use. You want to impress your fellow campers with your expert culinary skills, but you don't want to be stuck in the camp kitchen while they have all the fun either. This 1-pot, 1-step dinner desert will make sure they remember you. And it is so easy you can prep it in 5 minutes, set it on the fire, and forget it until it's done. The result will be a campfire desert they will talk about for years.

The Devil's Cherry Cobbler desert is cooked in a cast iron Dutch oven, and served from it too. Less mess, less clean-up. The only cookware you will need is a cast iron Dutch oven and a large serving spoon.

\"cherry Pie\"

The Devil's Cherry Cobbler ingredients:

  • 2 - 18-19oz. boxes Devils Food cake mix
  • 3 - 22oz. cans cherry pie filling
  • 1 - 20oz. bottle Dr. Pepper
  • 1 - stick butter
  • 1oz. cooking oil

Preparation:

  • Open the Dr. Pepper ahead of time so the carbonation can fizz out, you don't need fizz for this campfire recipe.
  • Pour 1oz. of cooking oil into a clean cast iron Dutch oven and use a paper towel to wipe the inside of the pot with it. Leave any leftover oil in the pot.
  • Open the cans of cherry pie filling and pour them into the pot.
  • Go ahead and drink about half of the Dr. Pepper, you only need half a bottle for this recipe. Pour that into the pot too.
  • Pour both boxes of Devils Food cake mix on top of the cherry filling and Dr. Pepper. DO NOT STIR!
  • Slice the stick of butter into patties and distribute around the top of the dry cake mix.
  • Put the lid on the Dutch oven, - You're ready.

Cooking:

With this cake-like campfire recipe, you want your Dutch oven to work like an oven, so make sure you have plenty of hot campfire coals to use. You will need a good bed of coals, at least the same diameter as your Dutch oven, with enough leftover to form a good layer on the lid of the Dutch oven.

This recipe will take 35 - 45 minutes to cook. After 20 minutes lift the pot and rotate it about 90 degrees one way, and rotate the lid 90 degrees the other way. Check the coals on the lid; they may need to be replenished.

After 30 minutes lift the lid and look inside, the cake should look semi-dry all over, and starting to pull away from the pot walls on the top. When the cake looks dry and is pulling away from the sides of the pot all the way around, your desert is done. Remove it from the fire and dump the coals from the lid.

One last tip:

When you ladle each portion onto your fellow outdoor camper's plates, be sure to "flip" the portion over so that the top cake part lands on the bottom with the cherries on top. This is the crowning touch that makes it a true camp cobbler.

This campfire recipe will serve about 15 campers, with maybe a little bit leftover for seconds. And there will be requests for seconds! This is a never-fail camp desert that always leaves them talking about how great a camp cook you are. And you have time to enjoy their accolades because all you had to do for clean-up was set the Dutch oven back on the fire and let it bake itself clean

Fresh Pumpkin Recipes: 5 Great Ways to Use Fresh Pumpkin

It's autumn, and veggie shops are overflowing with beautiful golden pumpkins. Pumpkin is a highly nutritious vegetable, rich in antioxidants, fiber and vitamins, so it's a great way to add goodness to fall menus.

You can substitute canned pumpkin in any recipe using pumpkin puree, but you'll get a better flavour if you cook fresh pumpkin yourself. For the best flavour, slice and seed fresh pumpkin and roast in a medium oven for 30-40 minutes until tender. When cool enough to handle, remove skin and mash or blend the flesh. Alternatively, peel and seed raw pumpkin, cut into chunks, place in a large pan with the minimum of water and simmer until tender. Drain thoroughly and mash, blend or process to a puree.

Pies

Here are 5 ideas for using fresh pumpkin.

  1. Pumpkin soup Pumpkin makes wonderful soup. Cook cubes of fresh pumpkin in vegetable stock, adding other vegetables such as onion, leek, potato, carrot or turnip if you wish. When the vegetables are tender, puree in a blender or food processor. For extra savour, add spices like cinnamon or nutmeg. Ground or grated fresh ginger also work well.
  2. Pumpkin cakes Add up to 175ml (1 cup) pureed pumpkin to teabread recipes, for moistness. Always use spice with pumpkin, because its natural flavour is very mild. Traditional choice is a mix of cinnamon, ginger, nutmeg, cloves and allspice.
  3. Pumpkin pies Thanksgiving wouldn't be complete without a pumpkin pie. The simplest way to make one is to use bake a pastry case or pie crust (or buy a good quality ready-made one). For enough filling for two 9-inch (20cm) pie crusts, mix 450 ml (2 ½ cups) pumpkin puree, fresh or canned, with 5 fl oz low-fat evaporated milk, three beaten eggs and 1 ½ tsp cinnamon, ¾ tsp ginger, ¼ tsp each nutmeg and allspice (but check before adding spices, as some canned pumpkin comes ready-spiced). Bake for 15 mins at 425F/220C/gas 7, lower the temperature to 350F/180C/gas 4 for another 40 minutes.
  4. Pumpkin pancakes Great for breakfast, these are whizzed up in minutes. Substitute 90ml (1/2 cup) pumpkin puree for the same quantity of milk in your favourite pancake recipe and cook in a hot pan, pouring just enough batter to make small pancakes.
  5. Pumpkin in savoury dishes Try cubed pumpkin, browned with onion and garlic, then simmered in a tomato sauce with a dash of chilli. Great with pasta or rice. Or use pumpkin in risotto. Finely chop and soften 4 shallots or one onion in a little olive oil. Stir in 250g ( 1 ½ cups) risotto rice, 500g (3 cups) grated fresh pumpkin (use a food processor to do the grating), then gradually add 850ml (5 cups) hot vegetable stock, making sure each addition has been absorbed into the rice before you add the next. When rice and pumpkin are tender, stir through a generous grating of Parmesan cheese, and leave to stand, covered for 10 minutes to allow the rice to swell.

Pumpkin is only in season for a couple of months, so make the most of it this year in these fresh pumpkin recipes.

Macroon Cookie Recipes

These macroon cookie recipes are delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some macroon cookie recipes:

\"Pie Recipe\"

>>Sliced Almond Cookie

1 c sliced almonds chocolate bits; for topping

1 egg whites

1/3 c sugar

Preheat the oven to 300. Line a cookie sheet with parchment paper. Stir together the egg white and sugar (I don't even use a mixer) and then stir in the almonds. Drop by teaspoon (they shouldn't be more than
2 inches in diameter) and top with a chocolate chip. Bake about 20 minutes until lightly browned. When you remove from the oven mash down the chocolate bit (it makes it look like a dab of icing) and let it cool before removing from sheet.

I use the same ingredients in the food processor and make balls out of the dough just over an inch in diameter. I flatten them slightly by pushing down drained maraschino cherry on top. I usually do double the recipe. I make these all year because they're so simple to make, everybody loves them and they are good for pesach.

>>Chewy Role Cookie Bar

1 pk yellow cake mix

1/2 c nuts, chopped

1/4 c butter, melted

2/3 c evaporated milk

36 role candy pieces, halved

Combine cake and nut meats in a medium bowl. Stir in evaporated milk and melted butter or margarine. Blend well. Spread half of cake mixture into a greased 9x13 inch pan. Bake at 350 degrees for 15 minutes. Remove from oven.

Immediately place role pieces, cut side down, over hot crust. Drop remaining cake mixture by teaspoonfuls over role pieces. Bake at 350 degrees for 25 to 30 minutes or until lightly browned. Cut in squares.
