Here is a great tasting chocolate chip fudge recipe that's as easy as pie to make. Whip up a batch of this chocolate fudge when you need to make a quick dessert.

2 (6 oz.) packages semisweet chocolate chips

1 (14 oz.) can sweetened condensed milk (do not use evaporated milk)

1/2 to 1 cup nuts, chopped

1 1/2 teaspoon vanilla extract

Directions

Line an 8-inch or 9-inch square baking pan with wax paper.

In a heavy saucepan, cook chocolate chips and milk over low heat until thoroughly melted. Remove pan from heat. Stir in the nuts and the vanilla. Spread fudge pan and chill in the refrigerator for 2 hours, or until firm.

Cut into squares before serving.

Stir in the chocolate chips, pecans and vanilla. Cook and stir until the chocolate chips are melted and all is well blended.

Pour fudge mixture into baking pan. Chill in the refrigerator for 30 minutes, or until firm. Cut into Squares before serving.

In a saucepan, combine 1 cup of milk and the chocolate chips; stir over low heat until melted. Stir in the vanilla. Pour 1/2 of the mixture into the prepared baking pan and let cool for 10 minutes.

In another saucepan, cook the white chocolate and remaining milk over low heat until chocolate is melted. Stir in the peppermint and green food coloring. Spread into baking pan over first layer. Let cool 10 minutes.

Pour remaining chocolate mixture into baking pan over the mint layer. Let cool. Cut into squares before serving.

Homemade Pot Pie - Recipe For Beef Pot Pie

This recipe for homemade beef pot pie is a good way to use leftover pot roast from Sunday dinner. The dropped biscuits can be made from scratch, or a box mix may be used.

Ingredients for Pot Pie

2 cups of leftover, fully-cooked roast beef, cut into small pieces
1 sweet onion, chopped
1 cup canned peas, drained
1 teaspoon salt
1/4 teaspoon pepper
1 cup cooked potatoes, cut in chunks
1 cup cooked carrots, cut in chunks
1 jar of beef or au jus gravy
Dropped biscuit dough, prepared (below)

Instructions for Pot Pie

Preheat oven to 350 degrees.

Gently combine all ingredients, except the biscuit dough, in a large mixing bowl with a big spoon, such as a wooden spoon.

After adding the jar of gravy, fill it with a little water, put the lid back on, shake it up, and mix this in with the rest of the mixture.

Pour the prepared mixture into a 13 by 9 inch cake pan. Drop the biscuits on top (see below) to cover the pot pie.

Bake at 350 degrees for 20 to 30 minutes, or until hot through and biscuits are done and nicely browned. Since everything is already cooked, this just has to heat through and blend the flavors.

Dropped Biscuit Dough

2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon shortening
Milk to make a stiff batter

Put dry ingredients in a large bowl and mix together. Add the shortening and work through with tips of fingers or fork. Add milk, small amounts at a time, until you have a batter that can be dropped from a spoon without spreading.

Drop by spoonfuls on top of the pot pie mixture.

Vanilla and Rum Sauces Make Holiday Desserts Special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas dinner was always roast beef and Yorkshire pudding. Dessert was always plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom made plum pudding from scratch a few times, but it was so much work she finally bought Crosse and Blackwell pudding imported from England.

The plum pudding was served with warm vanilla or rum sauce. I did not like the rich pudding, so I only ate a spoonful. But I could have eaten an entire bowl of sauce. Mom also served apple pie with warm vanilla sauce. The combination of warm sauce and fresh pie from the oven was heavenly. With a couple of changes the vanilla sauce recipe becomes rum sauce or rum-raisin sauce.

I have lightened the recipe by using Splenda Blend for Baking instead of sugar and elminating the half cup of butter in the original recipe. However, I have added a tablespoon of butter for flavor. Top frozen waffles with vanilla ice cream and sauce and you have one of the best desserts on the planet. Garnish with a twist of orange peel and fresh mint to make your holiday desserts more festive.

WARM VANILLA SAUCE

INGREDIENTS

1/2 cup Splenda Blend for Baking

2 tablespoons cornstarch

1/2 teaspoon light salt

2 cups hot water

1 tablespoon butter (no substitutions)

2 teaspoons pure vanilla extract

dash of freshly grated nutmeg

METHOD

Combine the Splenda Blend for Baking, cornstarch, and salt in a small saucepan. Whisk in hot water. Cook over medium heat, stirring constantly, until sauce has thickened. Remove from heat. Add vanilla extract and nutmeg. Makes 8 servings.

WARM RUM SAUCE

Omit the vanilla and nutmeg. Make the sauce and remove from heat. Add 2 teaspoons of rum extract.

WARM RUM-RAISIN SAUCE

Omit the vanilla and nutmeg. Add 1/4 cup raisins to the sauce and cook until thickened. Remove from heat and add 2 teaspoons of rum extract.

Every year, the same old' pie and same old' recipe gets a little old. Why not try beautifying your tried and true pie recipes with some easy pie decorations? 1. Using the cookie cutter approach allows you to make clever themed designs with the dough.

After rolling out your pie dough, take the extra overhanging pieces of dough and roll them into a ball . These are the pieces that are often to large for your lower pie crust and place them in the freezer. Roll the extra dough out at the same consistency of your pie crust and take your themed cookie cutter and stamp away. Be sure to flour the surface frequently, as this will prevent your pieces from sticking. If you don't have a cookie cutter, take a small knife and cut stars, leaves or candy canes. Place your dough pieces around the edge of the pie in a decorative fashion. On fruit pies, I prefer to place the shapes overlapping to form a decorative faux lattice work.

2. Braiding is a perfect easy pie design. Like before, take your leftover dough and roll it into a rectangle. Cut the dough into half inch strips (I prefer using a pizza cutter). Take the long strips and braid them gently. If the pie crust gets to warm and starts to break, put it back in the freezer for 15 minutes.
When you get to the end of a section, grab three more strips and incorporate into the original three by smooching them in. Keep braiding until you have a braid long enough to go around the edge of the pie. Press firmly on the edge of your pie.

3. The fold around method gives you a geometric design centered around an open hole in the middle and is ideal for fruit pies. Most easy pie dough recipes will give you enough for a top and bottom crust, so when it tells you to divide them into two discs, just keep them as one.

Roll out the full dough recipe and cut it into a circle 3 inches longer than your pie plate. Add the large dough circle to your pie plate and fill. Fold one side of the dough in and keep folding along to the left of the first fold. The dough will over lap on itself and create a hole in the center.

Jello Pie Recipe: Classic Jello Pie

Here is the classic Jello pie recipe that makes a lovely presentation for any occasion. You can use practically any flavor of gelatin and fruit to create a rainbow of fruity goodness.

2/3 cup boiling water

Pie Recipe

1 package Jell-O brand gelatin (any flavor)

1/2 cup cold water

1/2 cup ice cubes

2 containers Cool Whip

1 ready made pie crust

Directions

Pour gelatin mix into a large bowl. Bring water to a boil. Pour hot water over gelatin until completely dissolved. In a separate bowl, mix together the cold water and the ice cubes to make one cup. Combine cold water with the gelatin mixture and stir until all the ice melts.

Stir in one container of the whipped topping and beat with a wire whisk until mixture is nice and smooth. Refrigerate the gelatin for 15 to 20 minutes or until gelatin thickens. Spoon the gelatin mixture into the pie crust.

Refrigerate pie for 4 hours or overnight.

After the gelatin has cooled (but not set), add gelatin mixture to strawberries. Let mixture chill in the refrigerator until it has congealed.

With a wire whisk, beat the whipped cream, adding 4 tablespoons of the gelatin mixture as you go. Spoon the cream mixture into the bottom of the pie crust.

Pull out the strawberries from the cooled gelatin mixture and lay them on top of the cream mixture. Pour the congealed gelatin into the pie crust. Refrigerate pie for 4 hours or until completely set.

5 Easy No-Bake Pie Crust Recipes

During the hot Summer months, I avoid heating up my kitchen with the oven. I prefer to make no-bake pie crusts, by using alternative ingredients.

You don't need to use a rolling pin, dough board, pastry blender or any of the traditional pie baking equipment. All you basically need are the ingredients, a large bowl, a measuring cup and of course, your pie pan.

Pie Recipe

These recipes are easy to make and best suited for refrigerated or frozen dessert-style pies. You will want to chill your pie crust for 1 hour (or until firm), before filling the pie shell with your pie filling.

Chocolate Cookie Crumb

24 chocolate sandwich cookies, crushed
1/4 c. butter, melted

Combine crushed cookie crumbs with melted butter until well mixed. Press mixture firmly into place into a 9" around pie pan.

Cornflake Crust

1 c. crushed cornflakes
1/4 c. sugar
6 tbsp. butter (melted)

Combine crushed cornflakes with sugar and butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.

Vanilla Wafer Crust

1 1/2 c. finely crushed vanilla wafers (about 39)
6 tbsp. butter, melted

Combine crushed wafers with butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.

Graham Cracker Crumb

1 c. crushed graham crackers
1/4 c. sugar
6 tbsp. butter (melted)

Combine crushed graham crackers with sugar and butter. Toss thoroughly to combine. Press mixture firmly into a 9" round pie pan.

Pretzel Crust

1 1/4 c. crushed pretzels (no salt)
1/4 c. sugar
6 tbsp. butter (melted)

Combine crushed pretzels with sugar and melted butter. Toss to thoroughly to combine. Press mixture firmly into a 9" round pie plate.

Homemade Pumpkin Pie From Scratch

I have used my own cooked pumpkin puree in pumpkin recipes for years and it gives it a wonderful fresh taste that is totally different than a pie made with canned pumpkin puree. Pumpkins come in all sorts of sizes and shapes as well as varieties. You can use pumpkins grown for carving for  your pumpkin pie, but it is better to use a pumpkin that is grown for eating. Pie pumpkins are smaller, sweeter, less grainy textured pumpkins than the usual jack-o-lantern types.

Pie pumpkins are small, usually only 6 inches in diameter. You can usually obtain about 2 or 3 cups or puree per pumpkin. The puree can be frozen so that you can use it later in the season.

Pie Recipe

Wash the exterior of the pumpkin in cool or warm water, no soap.Cut the pumpkin in half. A serrated knife and a sawing motion works best. Scrape the insides with a heavy ice cream scoop or large spoon.

Steam the pumpkin in a large pan with a steamer basket on the bottom.Cook until the pumpkin is soft. Let cool a bit so you don't get burned. Use a large broad spoon to lift and scoop the cooked pumpkin out of the skin. It should separate easily an in fairly large chucks, if the pumpkin is cooked enough.

Some pumpkins are more watery than others. If your pumpkin is watery, strain pureed pumpkin through a cloth for a few hours. If I use frozen pumpkin I do the same again as it thaws out.

Blend the cooked pumpkin in a blender to get a smooth puree. It is now ready to use in any recipe calling for pureed pumpkin.

Pumpkin Pie from Homemade Pumpkin Puree

INGREDIENTS

1 (9 inch) unbaked deep dish pie crust

3/4 cup white sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon allspice

2 eggs

2 cups pumpkin puree

1 (12 fluid ounce) can evaporated milk

DIRECTIONS

Preheat oven to 425 F.

Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.

Bake for 15 minutes. Reduce temperature to 350 F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

First you need to prepare the seeds. Have a large bowl full of water to put the seeds in as you take them out of the pumpkins. The pulp will sink to the bottom of the water and your seeds will be clean. Remove the seeds and lay them out on paper towels or clean kitchen towels to dry (usually overnight).

You will want to roast the seeds at a low temperature to preserve the essential oils. You can pre-cook the seeds by boiling them in salted water before you roast. Add a touch of sweet: Add in a bit of maple syrup (eliminate oil or egg white), brown sugar, honey, nutmeg, pumpkin pie spice, cinnamon sugar or raw sugar

Spicy: Add your favorite of the following: Cayenne pepper, black pepper, hot sauce, ancho chili powder, crushed red chilli peppers, hot chilli powder

Savoury: Italian seasonings, garlic powder, onion powder, Worcestershire sauce, cheese flavour (you can use popcorn seasonings), sea salt, soy sauce, cumin, herb blends

Blends: Shake on some of the seasoning blends from your cupboard, like Cajun, Bar-b-q, Mexican, Tex-Mex, curry or Greek.

Combinations: Why not go sweet and spicy? Add a little raw sugar with some salt and crushed red pepper flakes or soy sauce, honey, garlic powder and sea salt. A good asian savory combination is Worcestershire sauce, garlic powder, sea salt and seasoning salt. The possibilities are endless. You will need several teaspoons of spice mix for every 3 cups of seeds, but add more or less according to your taste.

Roasted seeds can be added to salads, soups, cereals and veggie dishes. They can also be crushed and added to meat mixtures (like hamburger), oatmeal, muffin mixes and rice pudding. If there are any leftover seeds, store them in an airtight container in the fridge for up to a month.

Bean Pie Recipe - Navy Bean Pie

This is the flavorful bean pie often served by Muslim bakeries and individual cooks. Don't let the beans fool you, though, this pie is really delicious and taste similar to pumpkin pie.

1 unbaked 9-inch pie shell

Pie Recipe

2 eggs, lightly beaten

1 cup evaporated milk

2 cups navy beans, cooked and mashed

3/4 cup sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon salt

1/2 teaspoon ginger

1/2 teaspoon cloves

Whipped cream topping (optional)

Directions

Preheat oven to 425 degrees.

Put cooked beans into a food processor or use an electric mixer to get them to a smooth consistency.

In a bowl, combine the eggs and evaporated milk. Add in the beans, sugar and spices. With an electric mixer, beat on low speed until well blended.

Pour bean mixture into the pie shell. Bake for 15 minutes. Reduce heat to 350 degrees and bake another 35 minutes, or until knife inserted in center comes out clean.

Serve with a dollop of whipped cream.

In a large bowl, combine the beans, green chilies, tomatoes, onion and garlic.

Line a 9-inch pie pan with one pie crust. Pour 1/4 of the bean mixture into the crust and spread evenly. Sprinkle on some of the cheese and cover with a tortilla.

Continue layering the bean mixture, cheese and tortilla until all used up. Cover with the second pie crust. Seal edges of crust and make several slits on top of crust to vent.

Bake for 45 minutes, or until pie crust is golden brown.

A hearty meal of shepherds pie will give you that warm glow during the colder months. This recipe features ground beef, potatoes, cheese and mushroom soup.

5 medium potatoes, peeled and chopped

Pie Recipe

1 pound ground beef

6 slices American cheese

1 (10.75oz.) can condensed golden mushroom soup

3 teaspoons butter (optional)

Directions

Preheat oven to 375 degrees.

Place the potatoes into a large saucepan and add enough water to cover. Bring to a boil. Cook for 8 to 10 minutes, or until tender. Drain and mash.

While the potatoes are cooking, crumble the ground beef into a large skillet over medium high heat. Cook and stir until evenly browned. Drain off the grease. Stir in the mushroom soup.

Transfer mixture to an 8-inch square baking dish. Layer the slices of cheese over the meat. Spread mashed potatoes evenly over the top. Dot with butter.

Bake for 20 to 25 minutes, or until the top is golden brown.

over mixture. Dot with butter.

Bake for 30 minutes, or until potatoes are slightly browned.

How to Make a Homemade Chocolate Pie From Scratch in 5 Steps

Are you bored of the same black forest cakes on every occasion? It is time to extend your expertise to a wider delicacy range. The following recipe will teach you to prepare homemade chocolate pie in five simple steps starting from the scratch. So, forget the regular chocolate cakes, switch over to a delicious homemade chocolate pie, and surprise your family with your expertise.   

Before beginning with the preparation, you will need the following items for making a good tasting chocolate pie. You would require an oven for the purpose along with a ready-made pie shell, which are easily available in the markets. You would need approximately one cup of sugar and one fourth teaspoon of salt, two cups of milk along with three tablespoons of cocoa and flour, 3 slightly beaten egg yolks, two tablespoons of butter and one teaspoon of vanilla essence. You can replace the cocoa with chocolate; however, the quantity needs to be reduced as well. One and a half squares of chocolate used in baking would suffice the preparation mixture for the chocolate pie. You will also require a saucepan and a mixer for blending the ingredients.

Pie Recipe

1. Beginning with the oven, preset the temperature to 350 degrees. Your chocolate pie shell would require baking. Do the same as per the instructions that are mentioned on the package. Do not forget to poke holes in your piecrust and continue to bake until it develops a brown tinge. This may take as much as 20 minutes, the approximate time it would take to get your pie filling ready.  

2. While the crust is baking, you can set the rest of the ingredients for your homemade chocolate pie. Use a flour bowl for adding the cocoa or chocolate squares, flour, sugar, and salt. Stir this mixture until they are blend well with one another. With this prepared, beat your egg yolk well and add it to the first mixture of flour and cocoa. You can save the white of the eggs for preparing meringue.  

3. In a 4 quarts saucepan, add milk and the first mixture and continue to cook them at a medium heat. Make sure that you continue the cooking with constant and regular stirs in order to keep the mixture from sticking to the pan. Continue with this as long as the mixture begins to change its state, this will take approximately ten minutes. If lumps develop in the mixture, beat them out. When the mixture starts to bubble and thickens up, remove the saucepan from the stove.

4. Now is the time to add your vanilla extract and butter. Once these ingredients are added, place the mixture once again on heat and continue to stir until the butter in the mixture starts to melt. Your piecrust should be baked to the appropriate color by this time.

5. Your last step is to pour the mixture into the shell. If you are not interested in preparing meringue, you can simply go ahead, place your pie in the oven, and set it to 350 degrees. This should take another 15 minutes; once done, you can add toppings such as shaved chocolate or strawberries to your homemade chocolate pie.

This is very mild in flavor and just a super easy recipe,

    Susan Pittser's Pumpkin Pie Recipe
  • 1 pack of Pillsbury Ready Roll out Pie crust
  • 4 eggs
  • 1 15oz can of 100% pure pumpkin
  • 1 3/4 cup sugar
  • 1/2 tsp salt
  • 2 teaspoons of Cinnamon Or the Tupperware CINNAMON/VANILLA seasoning blend
  • 2 cans of milnot Evaporated milk (12oz each) (pet milk, carnation evaporated milk or other brand will work)

Pie Recipe

You can choose to make either TWO 9 inch pies or
One 9x13 cake pan with a larger pie for larger crowd, I make the 9X13 version alot and use my Tupperware Rectangular Cake Taker to transport it to potluck and get togethers.
To make the cake pan size I just put two of the pie crusts together and shape the dough out to fit.

To make the filling

Beat Eggs, Add Sugar and Pumpkin and salt and mix together add cinnamon vanilla seasoning blend and then last add the milnot to the mixture then pour the filling into your pie crust and bake at 350 degrees for 50 to 60 minutes,

You can tell if the pie is done by piercing the center of pie with a butter knife, if it comes out clean the pie is done, if it doesn't come out clean then bake at 5 minute intervals and testing until done.
Let Stand and Cool and
Top each piece with Cool Whip if desired, Keep refrigerated when storing leftovers.
