1/2 cup sugar

Preheat oven to 450 degrees.

First of all, don't peel the apples. Core and cut apples into 1/2-inch thick slices. Place apple slices into the pie crust.

Bake 30 to 40 minutes until edge of pie is golden brown and the apples are nice and tender. Keep in mind when serving - this pie will have a loose texture and not be firm like regular apple pie.

How to Make Homemade Dried Apple Slices

Step 1
When selecting your apples make certain that there are no rotten or bruised parts on the apples. Depending on your taste, you can choose whichever variety of apples you prefer.

Step 2
Most apples bought from your grocery store have been treated with some form of pesticide. It is therefore important that you wash and dry your apples before peeling and/or cutting them.

Step 3
If you were unable to find perfect apples, cut out soft spots and bruises found on your apples.

Step 4
This step is optional and only if you prefer your apple slices to be peeled. If not, skip this step and go to step 5.
An electric peeler is ideal for this job as it will peel, core and slice up your apples for you.

Cut your cored apples into 1/8 inch thick rings.

* Using a Food Dehydrator: This is by far the easiest (and fastest) way to dry your apple slices. Simply line your pieces in a single layer on the racks allowing air to circulate. You can now sprinkle a bit of cinnamon or allspice over your apple pieces should you prefer. Set you dehydrator to 105 degrees Fahrenheit and you will have perfectly dried apple slices within 12 to 24 hours.
* Using Your Oven: Preheat your oven to the lowest temperature possible and arrange the apple slices on a baking tray ensuring that the apple pieces do not touch. It should take about 10 to 20 hours for your apple pieces to dry in the oven. You will need to check them from time to time. You can speed up the process by turning your oven a little higher but then you will need to keep a close eye on your apple pieces.
* Using Your Car: Strange as it might sound, your sun-baked car is ideal for drying apple pieces. Once again using cookie trays arrange your apples in a single layer and cover them loosely with cheesecloth. Park your car in a sunny spot, roll up the windows and place the trays on the dashboard. It could take up to two days, but your apple pieces will dry perfectly. Just be cautious, because your car will smell like apples for quite awhile!

Using Your Dried Apple Slices
* You can rehydrate your apple slices by placing them in boiling water for about 5 minutes.
* Dried apple slices can be used with other dried fruits to be used as snacks or mixed with granola.
* Use them in apple pie.
* Use them as turkey dressing by mixing them by simmering and mixing them with nutmeg or cinnamon.

Preheat oven to 350 degrees.

Gently combine all ingredients, except the biscuit dough, in a large mixing bowl with a big spoon, such as a wooden spoon.

After adding the jar of gravy, fill it with a little water, put the lid back on, shake it up, and mix this in with the rest of the mixture.

Pour the prepared mixture into a 13 by 9 inch cake pan. Drop the biscuits on top (see below) to cover the pot pie.

Bake at 350 degrees for 20 to 30 minutes, or until hot through and biscuits are done and nicely browned. Since everything is already cooked, this just has to heat through and blend the flavors.

I love red potatoes because they are so versatile, not mention all the vitamins that go into your meal when you add the red potato as a side dish. 1) Apples! Apples! Apples! The most important part of the apple pie is obviously the apples. If you are lucky and live in an area with apple groves then pick a combination of tart and sweet apples and put them in a pie within 24 hours. If you live nowhere near an apple grove I recommend Granny Smith apples for your pie. The tartness combined with the sweetness of the sugar/cinnamon mixture creates an amazing taste. Another combination that works great is McIntosh and Cortland apples but only if the apples are fresh.

2) Don't burn the crust. When baking an apple pie, one of the big problems is burnt edges of the crust. To prevent this problem cover the edges of your pie with tin foil. But don't scrunch it down around the sides. Because the foil reflects the heat, the pastry edges may end up under baked. Or, you can actually purchase an edge guard at your local kitchen supply store that is placed over the edges of the pie to protect them from burning.

3) Taste the apples! Once you add your cinnamon/sugar mixture taste test your apples. Do not be afraid to add more brown sugar and cinnamon to your mixture. You can't spoil something good by adding something good to it!

To prevent this from happening add dry beans to the bottom of the shell prior to placing it in the oven. Or you can actually purchase weighted beads that can be placed in the bottom of the shell to prevent the pastry from rising.

5) A mountain of apples is a good thing. Always prepare more apples than you think you will need. Make a mountain in the pie shell when you add the apples. Stretch the top pie crust over the mountain of apples as best you can. You will find while the pie bakes the mountain of apples will deflate. You will be left with a pie that has a sufficient amount of apples. Without the mountain you may end up with a caved in pie and few apples per slice.

6) The garnish: Ice cream. Don't forget to offer ice cream with each slice of pie. Be imaginative. Vanilla ice cream is the standard scoop to add to a slice of apple pie. Try cinnamon or butter pecan ice cream instead. Cookies and Cream ice cream works very well, as does Pistachio and Peach ice cream.

7) Apple Pie with a twist! Instead of the standard apple pie, look for variations of the recipe. Try Dutch Apple pie or French Apple pie or apple pie combinations like Rhubarb/Apple or Cranberry-Raisin-Apple pie.

8) Caramel yum!! Instead of ice cream, drizzle melted caramel over your apple pie. This gives your pie an added sweetness that will impress your family and friends.

9) Sweetness other than sugar. If you do not think your apples are sweet enough but you do not want to add sugar, try 1tbsp lemon juice, some finely grated lemon zest, and 2 tbsp melted apple jelly. The addition of the jam adds a special sweetness to the pie.

10) Pretty as a picture. The top of the apple pie must be vented with a few slices of the knife through the top pie shell. Instead of simple slits add a pattern or pretty decoration. Cut your loved one's initials in the pie shell, or a heart, or star. Your imagination is the limit!

During the fall months when apples are in season here on the east coast, I like to go to our local orchard and purchase Gala's by the bushel. Once I get them home, I like to make and freeze applesauce and apple pie filling.

It is really a simple process and can save you a lot of money. I take one weekend afternoon and have it done within a few hours. When purchasing your apples, buy them in bulk and check them over for bad spots. Stay away from any apples that have been sitting out in the heat for a long period of time. You will want to cut out any bad spots that you come across.

Apple Pie Filling Recipe

4-6 apples

1/2 cup granulated sugar

1 teaspoon lemon juice

Wash apples and then pat dry. Peel, core and slice into wedges. In a medium-sized bowl, combine wedges, granulated sugar and 1 teaspoon lemon juice. Gently stir apples until coated with sugar and lemon juice. Pack into freezer safe bags or plastic containers leaving a 1/2" of head space.

Note: You can use an anti-darkening agent such as Fruit Fresh instead of lemon juice.

Applesauce Recipe

4-6 apples

water

1/2 cup granulated sugar

1 teaspoon lemon juice

1 teaspoon cinnamon

Wash apples and then peel, core and slice into small chunks. Place chunks into a saucepan with just enough water to prevent scorching. Stir in granulated sugar, lemon juice and cinnamon. Turn burner to low heat and slowly simmer mixture until the apples cook down and become soft. Drain any left-over water. Run mixture in a blender or food processor until it's the consistency of applesauce. Let cool and then spoon into freezer-safe containers leaving a 1/2" of head space. If desired, you can sprinkle additional cinnamon on top before sealing.

If you're looking for a good "homemade baked beans recipe" recipe - this is the place! Everyone loves some good baked beans, but most recipes call for them to be in a crockpot. Mine doesn't, instead I use can beans and cook them on the stove top. It's true, you could just buy a fancy can of Bush's baked beans, but it's just not the same as making your own homemade baked beans and letting them simmer of the stove as the flavors meld together! These are equally as good in the summer with a BBQ as they are in the winter on a cold blistery day!

  • 3 cans great northern or navy beans, or 1 - 48oz jar or Randall's mixed beans (drained)
  • 1 small onion (diced)
  • 2 cloves garlic (diced)
  • 1 cup barbeque sauce
  • 1/2 cup ketchup
  • 1 Tablespoon mustard
  • 1/4 cup brown sugar
  • 3-4 strips of chopped cooked bacon (if you like)

1 (15 oz.) package refrigerated pie crust

1/3 cup margarine or butter, softened

1 cup sugar

3 eggs

2 tablespoons flour

1/4 cup lemon juice

1 tablespoon grated lemon peel

Directions

Preheat oven to 450 degrees.

Make pie crust following the package directions for one 9-inch pie crust. You'll also need a 9-inch pie pan.

3/4 cup green peas

1/3 cup celery, diced

1/3 cup carrots, diced

1 1/2 cups cheddar cheese, shredded

2 tablespoons cornstarch

1/4 cup milk

2 (9-inch) pie crusts

Directions

Preheat oven to 325 degrees.

In a medium saucepan, combine the chicken stock, shredded chicken, peas, celery and carrots. Bring mixture to a boil.

Mix the cornstarch with the milk and stir into the stock mixture. Cook the mixture for 5 minutes; stirring constantly. Remove from heat and let cool for 1 hour.

Stir the cheese into the filling mixture and pour all into a 9-inch pie crust. Place the second crust on top of the mixture and seal the edges. Cut slits into the top of the crust to vent. Place pie on a cookie sheet and bake 35 to 40 minutes, or until the crust is golden brown.

1/4 cup butter, softened

Directions

Preheat oven to 400 degrees.

Make Meat Filling: In a large skillet, crumble the ground beef and sauté over medium heat for 1 minute. Add in the onion and carrots; continue to sauté until meat is brown (about 5 minutes). Stir in the flour, cinnamon, Italian seasoning and parsley.

In a small bowl, combine the beef broth and tomato paste; mix well. Add to beef mixture. Add salt and pepper to taste. Lower the heat to simmer and cook for 15 minutes, stirring occasionally. Cook until most of the liquid has been absorbed. Spoon beef mixture into a 9-inch pie plate.

Make Potato Topping: Put potatoes into a medium sauce pan and cover with water. Bring to a boil over high heat. Boil for 15 minutes, or until potatoes are tender; drain.

Mash the potatoes until smooth. Add butter and milk. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle cheese on top.

Bake for 25 minutes, or until top is brown and cheese is bubbly.

4 tablespoons olive oil, divided

2 medium onions, diced

1 pound eggplant, cut into 1/4-inch slices

1 large egg, beaten

Directions

In a 12-inch oven proof skillet, heat 2 tablespoons of oil over medium high heat. Add onions and sauté until tender (about 5 minutes). Add garlic, cinnamon and cloves; continue cooking for 1 minute.

Add meat, stirring occasionally to break it up; cook for 5 minutes. Stir in tomatoes and raisins. Reduce heat and simmer for 10 minutes.

Arrange the eggplant slices on a lipped cookie sheet. Brush both sides of eggplant with remaining oil, and season with salt and pepper. Broil eggplant on the upper oven rack, turning once with kitchen tongs, until golden brown (about 5 minutes per side).

Warm up mashed potatoes according to package directions.

Reduce oven heat to 400 degrees. Lay eggplant in a single layer over the meat mixture. Whisk the egg into the mashed potatoes; spread over eggplant. Bake on lower oven rack for 20 minutes, or until sauce is bubbly.

Best key lime pie recipe is a world's favorite of mine which takes me back to when I saw Bobby Flay make one on the food network. It seemed so easy to make in fact if was very easy and took only 15 minutes to 30 minutes to complete. Even though it looked like ice cream it was not for sure. He used some of the most popular ingredients such as key lime juice, sweetened condensed milk, cream cheese, cool whip topping, graham cracker crust, and eggs yolks. The pie crust seems to be the most delicious looking part of the dish. Here is the ingredient to my favorite recipe:

Mrs. Butters' Secret Key Lime Pie Recipe

"Frozen Key Lime Pie recipe?" Fern Butters asked. "Child, I'll take that secret with me to the grave."

Fern Butters' frozen key lime pie was legend. Every time President Harry S Truman went through Islamorada on Upper Matecumbe Key on his way to the "Little White House" in Key West, he stopped. More specifically, he
stopped at Fern Inn for some of Fern Butters' frozen key lime pie.

And so did other folks, commoners and dignitaries alike-Papa Hemingway, Cordell Hull, Douglas Fairbanks, Julia Child . And me.

Mrs. Butters' Secret Key Lime Pie Recipe

I didn't see any of those famous folks. Except Julia Child. And I didn't know who she was. Ignorance of youth.

But I did eat Mrs. Butters' frozen key lime pie.

I wasn't a child when I asked her about the recipe. I had recipes for my grandmother's compressed fruit cake. And my grandfather's elderberry wine. And a passel of others I'd collected from near and far. So I thought her recipe would fit right in with my collection.

Not so. I was a young pastor at her little church in Matecumbe. But I could have been Gabriel himself.

And could never obtain that closely guarded secret.

Many had tried to replicate her recipe, but without success. I saw Julia Child once try to wheedle the recipe from Fern Butters with no success. I heard she tied to duplicate the recipe-again, no success.

Of course, that may just be a legend. It's believable. Everyone who ever ate her frozen key lime pie coveted the recipe.

Well, Fern is now dead. The Fern Inn has changed names. Fern took the recipe to the grave with her.

But, recently her daughter called me up. She said that after all these years she was going through her mother's letters and things and trying to clean out an old dresser drawer packed with old letters and notes.

She came across an envelope with my name on it. She wanted to know if I were the same preacher that served the little church down in Matecumbe.

This was a strange event. I had moved to Wisconsin serving churches there for several years. When I returned to South Florida, I was a professor in a college for 33 years. I retired from the college and served a church in North Miami Beach for 13 years. I retired again. Then answered a desperation call to serve as chaplain at a retirement community. I just happened to be in the area where Fern Butters' daughter could contact me.

She sent me the envelope, now yellow with age. Fern had been dead for some 40 or so years. I opened the envelope. The note read:

This is what you asked for. Use it wisely.

And there was the recipe!

Now I've wondered what to do with this recipe. I could, of course, just publish it. Or I could write a book about my days as a young pastor among the Keys Conchs, as the folks there called themselves. I might even sell it [How long would that last!?]

But I've decided to give it away. I'm not even going to swear the recipients to secrecy. I'm just going to give it to folks who have a love for unusual recipes and for historical recipes. I have a buddy from North Carolina, for example, whose family has a recipe for pumpkin soup handed down since pioneer days.

And then there's my friend from Ladies Island in Beaufort County South Carolina. She claims her ancestors created Frogmore Stew.

There's an aunt in Western Maryland says she will give me the recipe for "Puddin'," a meat product that's out of this world when used on pancakes. I've no idea what the ingredients are, but I long to find out.

1 Cup sweetened condensed milk

6 egg yolks [save whites]

½ Cup key lime juice [genuine key lime]

6 egg whites [I told you to save them!]

1 Tablespoon cream of tartar

1 Cup sugar

1 graham cracker pie crust [preferred-regular crust permissible]

½ pint secret ingredient

Procedure

Filling

Add yolks to condensed milk and beat 8 minutes

Add secret ingredient and beat until well mixed

Add key lime juice and mix well

Fold into pie shell

Place in freezer until well set. Keep unused portion in the freezer for up to a week [if it lasts that long!]

Topping

While pie sets beat 6 egg whites with cream of tartar for 5 minutes.

Add 1 cup of sugar and whip until meringue makes peaks when beater is removed from mixture.

Add to top of pie

Brown in 350◦ oven and cool in refrigerator for 15 or more minutes for a regular pie or in the freezer for an hour if it is frozen key lime pie.

Secret ingredient. ½ pint of soft vanilla ice cream.

Don't laugh. The addition of this secret ingredient has stumped many a jealous cook and chef, including, as I said, Julia Child. Reveal it and you take the mystery out of your own ability to produce "Harry Truman tested" Frozen Key Lime pie.

Beef Pot Pie Recipe - Homemade Beef Pot Pie

1 (14 oz.) can beef broth

3 large carrots, cubed

1 cup frozen green peas, thawed

3 tablespoons cornstarch

1/3 cup water

2 (9-inch) refrigerator pie crusts

Directions

Preheat oven to 350 degrees.

In a saucepan over medium high heat, brown the pieces of meat on all sides. Pour in enough water to almost cover the meat. Bring to a boil and reduce heat. Simmer meat until it falls apart easily (about 2 to 3 hours). Place meat in a large bowl. Slightly shred the meat and season with salt and pepper to taste.

In a 2-quart saucepan, combine the beef broth, carrots and potatoes. Cook over medium high heat until almost tender (about 15 to 20 minutes).

When the carrots and potatoes are done, transfer to a large mixing bowl and combine with the beef. Reserve the liquid in the saucepan. Mix the peas in with the vegetables and beef.

Dissolve the cornstarch in 1/3 cup of water and pour this into the reserved beef broth. Bring to a simmer while stirring constantly; reduce heat. Cook for 5 minutes.

Line a 9-inch pie plate with one of the pie shells following package directions. Spoon the beef mixture into the pie crust. Pour the gravy on top. Cover with remaining pie crust.

Bake for 25 minutes, or until crust is golden brown. Let cool for 5 minutes before serving.

This recipe is an American favorite. We love hamburgers, so making a pie out of our favorite meat sandwich is a winning idea. To give this recipe a richer flavor, you can substitute 1 can of mushroom soup for 1 can of tomato soup.

1 onion, chopped

2 (10.75 oz.) cans condensed tomato soup

1 (15 oz.) can green beans, drained

Bring a large pot of salted water to a boil. Peel and quarter the potatoes and put into boiling water; cook for 15 minutes, or until tender. Drain and mash. Set aside.

In a large skillet, cook ground beef and onion over medium high heat until the beef is brown; drain. Stir in the tomato soup and green beans.

Pour mixture into a 9x13-inch baking dish. Mound the mashed potatoes around the meat mixture (do not cover meat). Sprinkle cheese on top of the potatoes.

Bake for 30 minutes, or until potatoes are golden.

Sprinkle beef with salt, pepper and oregano. Arrange tomato slices on top of meat. Sprinkle cheese on top.

In a small bowl, combine together the baking mix, milk and eggs. Pour over cheese.

Bake for 25 minutes, or until knife inserted in center comes out clean. Cool for 5 minutes before serving.

In a large oven proof skillet, cook the beef, onion and green pepper over medium high heat until meat is brown; drain. Stir in the soup, salsa, ketchup and steak sauce.

Prepare the cornbread batter according to package directions; let stand for 2 minutes. Spoon batter over beef mixture. Bake for 15 minutes or until corn bread is lightly browned. Garnish with parsley.

1 cup evaporated milk

2 cups navy beans, cooked and mashed

3/4 cup sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

Directions

Preheat oven to 425 degrees.

Put cooked beans into a food processor or use an electric mixer to get them to a smooth consistency.

In a large bowl, combine the beans, green chilies, tomatoes, onion and garlic.

Line a 9-inch pie pan with one pie crust. Pour 1/4 of the bean mixture into the crust and spread evenly. Sprinkle on some of the cheese and cover with a tortilla.

Continue layering the bean mixture, cheese and tortilla until all used up. Cover with the second pie crust. Seal edges of crust and make several slits on top of crust to vent.

Bake for 45 minutes, or until pie crust is golden brown.

5 medium potatoes, peeled and chopped

Directions

Preheat oven to 375 degrees.

Place the potatoes into a large saucepan and add enough water to cover. Bring to a boil. Cook for 8 to 10 minutes, or until tender. Drain and mash.

While the potatoes are cooking, crumble the ground beef into a large skillet over medium high heat. Cook and stir until evenly browned. Drain off the grease. Stir in the mushroom soup.

Transfer mixture to an 8-inch square baking dish. Layer the slices of cheese over the meat. Spread mashed potatoes evenly over the top. Dot with butter.

Bake for 20 to 25 minutes, or until the top is golden brown.

In a large skillet, sauté ground beef over medium heat for 1 minute. Add onion to skillet and continue to cook until beef is no longer pink and onion is beginning to brown. Drain off some of the grease.

Add corn, green beans and gravy to the skillet. Mix thoroughly. Add salt and pepper to taste. Pour mixture into a 9x13-inch baking dish. Spread potatoes over the top. Layer cheese slices over potatoes.

Bake for 40 minutes, or until cheese turns golden brown.

8 potatoes

1/4 cup butter

Reduce oven temperature to 350 degrees.

Peel, chop and boil the potatoes until tender; drain. Mash potatoes. Add butter, milk and the roasted garlic; mix well. Set aside.

In the bottom of a casserole dish, arrange the chicken evenly on the bottom. Sprinkle with salt, pepper, thyme and rosemary. Layer on the peppers, corn and all but 1/4 cup of the cheese. Spread mashed potatoes on top.

Sprinkle remaining cheese on top.

Bake for 25 minutes, or until brown around the edges.

Directions

Preheat oven to 375 degrees.

Boil potatoes until tender. Mash with 3 tablespoons of butter or margarine and milk. Season with salt and pepper to taste. Set aside.

Saute onion and carrots in olive oil until soft. Stir in the ground turkey, parsley, thyme and garlic. Once turkey is almost browned and broken up, add zucchini and mushrooms. Salt and pepper to taste; drain. Stir in the flour.

Divide meat mixture into two whole wheat pie crusts. Sprinkle cheese over meat, if desired. Spread green beans over the cheese. Spread mashed potatoes evenly
over mixture. Dot with butter.

Bake for 30 minutes, or until potatoes are slightly browned.

Best key lime pie recipe is a world's favorite of mine which takes me back to when I saw Bobby Flay make one on the food network. It seemed so easy to make in fact if was very easy and took only 15 minutes to 30 minutes to complete. Even though it looked like ice cream it was not for sure. He used some of the most popular ingredients such as key lime juice, sweetened condensed milk, cream cheese, cool whip topping, graham cracker crust, and eggs yolks. The pie crust seems to be the most delicious looking part of the dish. Here is the ingredient to my favorite recipe:

  • 4 cups of sugar
  • 1/4 cup clarified butter
  • 2 tbp melted butter
  • 3 egg yolks
  • 1  can condensed milk
  • 1/2 cup key lime juice

  • 1 1/2 teaspoons lime zest
  • 1 1/3 cup whipping cream
  • 1/4 cup of powdered sugar

Found in many cookbooks, the pie is an American dessert made of key lime juice, egg yolks, and sweetened condensed milk in a pie crust. The pie is made with carnation canned sweetened condensed milk, since fresh milk was not a common commodity in the hot temperature of the Florida Keys before modern refrigerated distribution methods.

The pie is a mixture of a rich, creamy yellow, from the egg yolks that enrich the citrus-kissed custard that makes up the filling. The pie is deep yellow in color. Regular of powered sugar can be used. The pie is a dessert made of key lime juice, egg yolks, and sweetened condensed milk in a pie crust. The key lime pie is delicious, but obviously it's not for everybody. It's great after a seafood dinner and is one of my wife's favorites. She loves it.

Recipe note: Fresh juice (some people even use some lemon juice) is far superior to bottled juice. Many early recipes for the pie did not instruct the cook to ever bake the pie, relying on this chemical reaction (called souring) to produce the proper consistency of the filling. The first recipe was written down in the 1930's, it had been made long before that down in Key West. The list of tales goes on and on in various cookbooks.

I bet even the great Sara Lee or Rachel Ray couldn't make a better pie for her new husband's birthday party. Rumor is it's his favorite.
