How to Make the Perfect Old-Fashioned Pie Crust

When it comes to baking the perfect pies, I believe it all starts with the perfect pie crust and in my opinion, store bought crusts do nothing for me. Like my mother and grandmother, I prefer good old-fashioned hand-rolled crusts made the traditional way with flour, shortening and other ingredients.

The following recipe was given to me 20+ years ago by my grandmother who was a fantastic pie baker. This recipe will make 3 crusts.

\"Pie Recipe\"

Freezing and Refrigeration Tip: If you are not going to be using all 3 crusts right away, you can roll them out and place in your baking dish. Cover with foil and place into the freezer for up to 3 months. You can make your dough and form into a large ball and place in your refrigerator for up to 12 hours. Remove from the refrigerator and let it come back to room temperature before rolling the dough out.

How to Make the Perfect Old-Fashioned Pie Crust

Triple Pie Crust Recipe

3 cups all-purpose flour

3/4 teaspoon baking powder

1 1/2 teaspoons salt

1 1/4 cup vegetable shortening

2 tablespoons cold milk

4 1 /2 tablespoons tap water

1 egg yolk

In a large bowl, mix together the all-purpose flour, baking powder and salt. Using a pastry blender, blend in the vegetable shortening and set aside. In a small bowl, combine the cold milk, tap water and egg yolk, blending ingredients together by using a fork. Stir the liquid mixture into the flour mixture until the ingredients are well combined. Let the dough sit for 5 minutes in a covered bowl.

Separate dough into thirds and roll each third out onto a floured dough board using a rolling pin. Your crust is now ready to be gently placed inside your baking dish.

If desired you can brush your top pie crust with an egg glaze which gives a nice glossy finish to your crust.

Egg Glaze Recipe

1 tablespoon cold milk

1 large egg yolk

Separate the egg yolk from the egg white using an egg separator. Add in the tablespoon of cold milk and whisk until blended. Using a pastry brush, lightly glaze your top pie crust.

2. Filling.

To prepare the crust, you need the following ingredients-

1. 2 and ½ cups of all purpose flour
2. 1 cup unsalted butter (Cold)
3. 1 Teaspoon sugar
4. 1 Teaspoon salt
5. Ice cold water

Mix the flour with ice cold butter cut in cubes. Add sugar and salt and mix it well, with cold water till the crumbs of the flour with pieces of butter and water hold together as dough. If they still crumble add a few drops of water again. Roll the dough to form the crust bottom and another for the covering layer. Cover the two rolled crust with a cloth and leave it in the refrigerator.

For the apple filling, peel the apples and slice then long. Take apples according to the size of the crust plate, or baking tray. Approximately you can take 6 -7 cups of all apple for a medium sized pie. Add ½ cup of powdered sugar, 1 teaspoon freshly grounded cinnamon, 1/4th teaspoon of nutmeg powder, 1 teaspoon of lemon juice, and 1 teaspoon of butter to the sliced apples. Mix this well.

Place the cold rolled crust into the pie pan. Brush butter over the crust and place the apple fillings into the crust. Now place the next cold rolled crust over the filling, covering the pan. Blend the two crusts from the sides to close the apple filling with-in perfectly. Take a fork and poke in a few holes to give way to the moisture while making. You can always beat an egg and brush it slightly over the crust, or else simply bush butter over before baking. Pre-heat the oven up to 350 degree F and bake the pie for about 15 to 20 minutes till you see it turning golden brown and the aroma of baked cinnamon flavored apples inviting you.

Cool the pie and serve the pie slices with vanilla ice cream. You can try the above pie recipe with different fruits like strawberry, mango or oranges and pineapple for other fruit flavors.

When selecting your apples make certain that there are no rotten or bruised parts on the apples. Depending on your taste, you can choose whichever variety of apples you prefer.

Step 2
Most apples bought from your grocery store have been treated with some form of pesticide. It is therefore important that you wash and dry your apples before peeling and/or cutting them.

Step 3
If you were unable to find perfect apples, cut out soft spots and bruises found on your apples.

Step 4
This step is optional and only if you prefer your apple slices to be peeled. If not, skip this step and go to step 5.
An electric peeler is ideal for this job as it will peel, core and slice up your apples for you.

Step 5
Cut your cored apples into 1/8 inch thick rings.

Step 6
Now it is time to dry your apple slices. You have three choices when doing this and below are directions for each option.

* Using a Food Dehydrator: This is by far the easiest (and fastest) way to dry your apple slices. Simply line your pieces in a single layer on the racks allowing air to circulate. You can now sprinkle a bit of cinnamon or allspice over your apple pieces should you prefer. Set you dehydrator to 105 degrees Fahrenheit and you will have perfectly dried apple slices within 12 to 24 hours.
* Using Your Oven: Preheat your oven to the lowest temperature possible and arrange the apple slices on a baking tray ensuring that the apple pieces do not touch. It should take about 10 to 20 hours for your apple pieces to dry in the oven. You will need to check them from time to time. You can speed up the process by turning your oven a little higher but then you will need to keep a close eye on your apple pieces.
* Using Your Car: Strange as it might sound, your sun-baked car is ideal for drying apple pieces. Once again using cookie trays arrange your apples in a single layer and cover them loosely with cheesecloth. Park your car in a sunny spot, roll up the windows and place the trays on the dashboard. It could take up to two days, but your apple pieces will dry perfectly. Just be cautious, because your car will smell like apples for quite awhile!

Using Your Dried Apple Slices
* You can rehydrate your apple slices by placing them in boiling water for about 5 minutes.
* Dried apple slices can be used with other dried fruits to be used as snacks or mixed with granola.
* Use them in apple pie.
* Use them as turkey dressing by mixing them by simmering and mixing them with nutmeg or cinnamon.

1 sweet onion, chopped
1 cup canned peas, drained

Homemade Pot Pie - Recipe For Beef Pot Pie

Instructions for Pot Pie

Preheat oven to 350 degrees.

Gently combine all ingredients, except the biscuit dough, in a large mixing bowl with a big spoon, such as a wooden spoon.

After adding the jar of gravy, fill it with a little water, put the lid back on, shake it up, and mix this in with the rest of the mixture.

Pour the prepared mixture into a 13 by 9 inch cake pan. Drop the biscuits on top (see below) to cover the pot pie.

Bake at 350 degrees for 20 to 30 minutes, or until hot through and biscuits are done and nicely browned. Since everything is already cooked, this just has to heat through and blend the flavors.

Dropped Biscuit Dough

2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon shortening
Milk to make a stiff batter

Put dry ingredients in a large bowl and mix together. Add the shortening and work through with tips of fingers or fork. Add milk, small amounts at a time, until you have a batter that can be dropped from a spoon without spreading.

Drop by spoonfuls on top of the pot pie mixture.

Red Potato Recipes - Easy Potato Recipes

I love red potatoes because they are so versatile, not mention all the vitamins that go into your meal when you add the red potato as a side dish. The white potato itself, red skin or otherwise, boasts almost half the daily requirement of vitamin C and over 600 mg of potassium. One of the big questions when preparing potatoes is always the same "To peel or not to peel?" The choice is totally up to you, but if you eat potatoes with the skin on you are adding about 2 grams of fiber per serving. Mom would be so proud! Just remember to hold the potato under cool water while using a vegetable brush to clean the skin really well before cooking. Below are a few of my favorite red potato recipes and I have even added a couple of variations.

Easy Steak Fries:
*preheat your oven to 350 degrees
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes and pat dry
*cut each potato into 4 wedges
*place in a large bowl and drizzle generously with olive oil, salt and pepper
*toss to make sure all potatoes are coated well
*for easy clean up line a cookie sheet with parchment or wax paper
*place potatoes on paper-lined cookie sheet for about 20 minutes, then turn and cook an additional 15-20 minutes.
*Potatoes are done when they are firm to the touch and start to brown.
*Serve with ketchup or your favorite dip

\"Pie Recipe\"

(variation) instead of salt and pepper use fresh or ground rosemary

Red Potato Recipes - Easy Potato Recipes

Yummy Mashed Potatoes
*In a 2 1/2 to 3 qt pot fill with enough water to cover the potatoes about 2 inches
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes
*quarter potatoes and then cut each quarter in half (you should have chunks of potatoes)
*boil potatoes on medium-high until tender, then drain water (about 20 minutes)
*put potatoes back on a very low fire
*use a potato masher to smash the potatoes, then stir with a whisk, or fork or hand mixer
--FOR EVERY 6 POTATOES
*add about 1 teaspoon butter, and 1 tablespoon milk
*season with salt, pepper to taste and stir well

(variation) - add about 1 tablespoon sour cream for every 6 potatoes
(variation) - add about 1/8 cup cheese for every 6 potatoes-whatever kind you like, cheddar, american, colby...
(variation) - add about 1/2 clove garlic for every 6 potatoes and put the garlic in the pot when you first put the potatoes in

The possibilities are endless with red potato recipes and that is the good thing. There is very little stress. If you are in a hurry when trying these red potato recipes, just skip the skinning process. Give them a good scrub and start cooking. Keep them on-hand for a quick, nutritious meal anytime, day or night.

Easy Classic Chicken Salad

I have adapted this easy classic chicken salad recipe by using a supermarket rotisserie chicken. I do this to save time and eliminate extra fuss. With our busy and hectic lifestyle, a working mom or dad needs to save as much time as they can. This simple recipe is not complex and it can be made in a matter of minutes. Try this salad recipe over greens or put it on rolls for sandwiches.

Easy Classic Chicken Salad

\"Pie Recipe\"

Serves 6

Easy Classic Chicken Salad

3/4 cup mayonnaise
2 tablespoons juice from 1 lemon
5 cups shredded roast chicken, at room temperature
2 celery ribs, chopped fine
2 scallions, minced
2 tablespoons minced fresh parsley or tarragon leaves
Salt and ground pepper

1. Whisk the mayonnaise and lemon juice together in a large bowl until smooth.
2. Stir in the chicken, celery, scallions, and parsley.
3. Season with salt and pepper to taste. Let sit at room temperature for 15 minutes before serving.

Classic chicken salad normally consists of tender breast meat pulled apart by hand, rather than cut with a knife. The mayonnaise is the ingredient that holds the breast meat together. Celery is used for texture while parsley and tarragon are added for flavor. Lemon juice is added for freshness. You can make the salad from leftover roast or poached chicken. Roasting the chicken is the best chicken to use for this recipe. Chicken salad made from roasted chicken gave forth more complex flavors and provided meat that was more moist and satisfying.

Remember, whether you're buying a whole chicken, chicken parts, or ground chicken, the key is to choose a reliable brand (such as Perdue or Pilgrims Pride) and inspect the package carefully. I hope you enjoy this easy classic chicken salad recipe. Be sure to visit our web site for more easy chicken recipes and other wonderful food creation ideas and practical cooking tips.

Ten Top Tips for Baking An Apple Pie

"Easy as apple pie" - how many times have you heard that? Well now you can make make apple pie like a pro and not have a nervous breakdown in the process! Here are my top ten tips for making the perfect apple pie every time.

1) Apples! Apples! Apples! The most important part of the apple pie is obviously the apples. If you are lucky and live in an area with apple groves then pick a combination of tart and sweet apples and put them in a pie within 24 hours. If you live nowhere near an apple grove I recommend Granny Smith apples for your pie. The tartness combined with the sweetness of the sugar/cinnamon mixture creates an amazing taste. Another combination that works great is McIntosh and Cortland apples but only if the apples are fresh.

\"Pie Recipe\"

2) Don't burn the crust. When baking an apple pie, one of the big problems is burnt edges of the crust. To prevent this problem cover the edges of your pie with tin foil. But don't scrunch it down around the sides. Because the foil reflects the heat, the pastry edges may end up under baked. Or, you can actually purchase an edge guard at your local kitchen supply store that is placed over the edges of the pie to protect them from burning.

Ten Top Tips for Baking An Apple Pie

3) Taste the apples! Once you add your cinnamon/sugar mixture taste test your apples. Do not be afraid to add more brown sugar and cinnamon to your mixture. You can't spoil something good by adding something good to it!

4) Extra weight is a good thing!! If you bake your pie shell prior to adding the apple filling the pie shell might inflate. To prevent this from happening add dry beans to the bottom of the shell prior to placing it in the oven. Or you can actually purchase weighted beads that can be placed in the bottom of the shell to prevent the pastry from rising.

5) A mountain of apples is a good thing. Always prepare more apples than you think you will need. Make a mountain in the pie shell when you add the apples. Stretch the top pie crust over the mountain of apples as best you can. You will find while the pie bakes the mountain of apples will deflate. You will be left with a pie that has a sufficient amount of apples. Without the mountain you may end up with a caved in pie and few apples per slice.

6) The garnish: Ice cream. Don't forget to offer ice cream with each slice of pie. Be imaginative. Vanilla ice cream is the standard scoop to add to a slice of apple pie. Try cinnamon or butter pecan ice cream instead. Cookies and Cream ice cream works very well, as does Pistachio and Peach ice cream.

7) Apple Pie with a twist! Instead of the standard apple pie, look for variations of the recipe. Try Dutch Apple pie or French Apple pie or apple pie combinations like Rhubarb/Apple or Cranberry-Raisin-Apple pie.

8) Caramel yum!! Instead of ice cream, drizzle melted caramel over your apple pie. This gives your pie an added sweetness that will impress your family and friends.

9) Sweetness other than sugar. If you do not think your apples are sweet enough but you do not want to add sugar, try 1tbsp lemon juice, some finely grated lemon zest, and 2 tbsp melted apple jelly. The addition of the jam adds a special sweetness to the pie.

10) Pretty as a picture. The top of the apple pie must be vented with a few slices of the knife through the top pie shell. Instead of simple slits add a pattern or pretty decoration. Cut your loved one's initials in the pie shell, or a heart, or star. Your imagination is the limit!

How to Make and Freeze Apple Pie Filling and Applesauce

During the fall months when apples are in season here on the east coast, I like to go to our local orchard and purchase Gala's by the bushel. Once I get them home, I like to make and freeze applesauce and apple pie filling.

It is really a simple process and can save you a lot of money. I take one weekend afternoon and have it done within a few hours. When purchasing your apples, buy them in bulk and check them over for bad spots. Stay away from any apples that have been sitting out in the heat for a long period of time. You will want to cut out any bad spots that you come across.

\"Pie Recipe\"

The following 2 recipes were given to me by my grandmother back in the 1980's and to this day, they are the 2 recipes that I use.

How to Make and Freeze Apple Pie Filling and Applesauce

Apple Pie Filling Recipe

4-6 apples

1/2 cup granulated sugar

1 teaspoon lemon juice

Wash apples and then pat dry. Peel, core and slice into wedges. In a medium-sized bowl, combine wedges, granulated sugar and 1 teaspoon lemon juice. Gently stir apples until coated with sugar and lemon juice. Pack into freezer safe bags or plastic containers leaving a 1/2" of head space.

Note: You can use an anti-darkening agent such as Fruit Fresh instead of lemon juice.

Applesauce Recipe

4-6 apples

water

1/2 cup granulated sugar

1 teaspoon lemon juice

1 teaspoon cinnamon

Wash apples and then peel, core and slice into small chunks. Place chunks into a saucepan with just enough water to prevent scorching. Stir in granulated sugar, lemon juice and cinnamon. Turn burner to low heat and slowly simmer mixture until the apples cook down and become soft. Drain any left-over water. Run mixture in a blender or food processor until it's the consistency of applesauce. Let cool and then spoon into freezer-safe containers leaving a 1/2" of head space. If desired, you can sprinkle additional cinnamon on top before sealing.

Side Dishes For Chili

Chili is one of those great dishes that can be served in tons of different ways and goes good with many delicious side dishes. But if you're thinking about serving chili the next time you have friends over for dinner or to watch the big game or when the weather starts getting cooler, here are some great ideas you might want to use.

Making Your Chili Even Better

\"Pie Recipe\"

Even if you already make the best chili on your block or at your tailgate parties, you could spice it up with some toppings. Of course, you'll find some of the traditional items on the list: shredded cheeses, sour cream, oyster crackers or crumbled tortilla shells (choose the ones with a hint of lime for an nice touch), saltine crackers, or even hot sauce.

Side Dishes For Chili

But those are a little bit basic. If you're talking about advanced chili topping for the chili connoisseur, then you'll want to shop around in your produce department or farmer's market. Adding scallions, green onions, cilantro, or avocado can give your chili a little color and extra taste. A dollop of guacamole instead of sour cream (or with sour cream) can also be scrumptious, especially if you make it homemade. Jalapenos are also nice for a kick and should be added by the individual consumers of the chili - not everyone likes the spice. Red onion or salsa can be nice additions, too.

Not Just for Bowls

Chili isn't soup so it doesn't have to be served alone in a bowl with a spoon. Instead, get creative with how you serve this dish. You can use Fritos for dipping or pour the chili on top of a baked potato, French fries, pasta (some people even add spaghetti or macaroni pasta to their chili), rice, taco shells, hamburgers or hot dogs, cornbread, or even scrambled eggs.

Chili goes good with almost any food but make sure to account for the potential messiness. Always have extra napkins.

Great Side Dishes

When you're serving chili, it's definitely hearty enough to be a main dish. And while some people like to eat their chili by itself, having some complementary side dishes can enhance the dish's flavor immensely. Cornbread is a delicious and traditional addition to chili. If you're trying to give your meal a Tex-Mex flavor, you could make Mexican cornbread with peppers, some shredded Colby/Jack cheese, and some kernel corn or if you want to make it spicier you can cut up pieces of jalapeno to add into the cornbread mix.

Black bean and corn salad is another choice. The salad, which is served cold or at room temperature, includes black beans, cubed cheeses, roasted corn, green onions, bell peppers, picante sauce, herbs, olive oil, and a few other tasty items. You can also toss in other items you love, such as avocados.

Another idea is a Southwest Vegetable salad that includes lettuce, colorful red peppers, cucumbers, tomatoes, onion, cilantro, and some toasted pumpkin seeds. This dish has just as much color as flavor and has a very delicious flavor especially when enjoyed along with a bowl of chili.

Side Dishes For Chili

Want more interesting side dishes for chili? Chili Everyway takes the mundane out of chili and presents fresh new ideas for spicing up this delicious comfort food that everyone will love.

Who Invented Ice Cream?

Unlike pottery, arrow heads and metal tools, traces of ancient ice creams are not really something that archaeologists can unravel. The ice cream history is therefore elusive and not very well known. People living in climates where ice and snow formed naturally are believed to have enjoyed a form of sorbet since prehistoric time by flavouring snow with fruit, berries and honey. This was probably especially popular in warm regions with high mountains, since snow could be gathered from the high altitudes and brought down to regions where it provided much sought after relief from the heat.

Even though ice cream itself leaves no visible mark in ancient history, items and buildings used for its creation can. Icehouses are for instance known to have existed as early as 2,000 years B.C. in Mesopotamia. Wealthy Mesopotamians had them built along the River Euphrates and used them to store food. We also know from historical sources that several Egyptian pharaohs ordered ice to be shipped to them in the hot and sunny regions in which they lived.

\"Pie Recipe\"

Once of the earliest known instances of true sorbet - not only ice and ice houses - are the honey and fruit flavoured snow cones that you could buy in Athenian markets during the 5th century BC. Later on, the Romans adopted a lot of Greek traditions, ice cream eating included. The Roman emperor Nero who reigned from 54 to 68 AD did for instance have ice transported to Rome from the mountains and mixed with fruit and toppings.

Who Invented Ice Cream?

In 400 B.C. the Persians invented a cool pudding made from vermicelli and rosewater. This chilled treat tastes a bit like a blend of sorbet and rice pudding, and was often mixed with fruits and saffron. Ice was quite readily available to wealthy Persians since they owned so called yakhchals; naturally cooled refrigerators in which ice collected from the mountains could be stored for longer periods of time.

The Arabs play an important role in the history of ice cream since they began using sugar and syrup instead of honey. In the 10th century B.C., sweet ice cream flavoured with fruits and nuts could be purchased in all major Arab cities. The Arabs also began adding milk to the ice-cream, making it more similar to the type of diary based ice-cream that is most widespread today.

It has been hard to determine when the Chinese began enjoy Chinese ice cream, but the first type of Chinese ice cream is believed to have been flavoured with sugar and sold during the warm summer season. Most historians agree that the upper class enjoyed ice-creamed flavoured with fruit juices during the Song Dynasty (960-1279 B.C.) According to "History of food" by Toussaint-Samat the Chinese may even have created a special ice-cream creation method earlier than the Song Dynasty. This method involved pouring snow and saltpetre over containers filled with syrup. Salt will lower the freezing point of water to subzero. Diary products are still rare in Chinese food, but according to legend Mongols introduced the custom of drinking milk to the Chinese during the Yuan Dynasty and this eventually led to the invention of milky ice-cream.
