It is possible to make desserts in fifteen minutes, which is good news if you suddenly have a craving for something sweet or if you have some last minute guests. One of the best ways to do this is to always make sure you have the right staples stocked in your pantry and refrigerator. You can make a basic dessert using a can of fruit and some whipped cream, a scoop of ice cream and a handful of cookies or a packet of instant pudding, some milk, and a pre-made pie crust.

Some instant pudding can be transformed into a pie or a layered dessert. Do not be afraid to add ingredients to dessert mixes and make them unique. A good dessert does not have to be made from scratch and you might be surprised to learn that not everything is made from scratch in restaurants, even top restaurants, because these days there are so many mixes and packets that we can use to help up.

There are so many desserts you can make on the fly. What about making homemade ice cream sandwiches by sandwiching vanilla ice cream and chocolate chips between store-bought cookies? You can buy pre-made crepes or tortillas if you do not want to make your own, and fill them with whipped cream and fresh fruit.

Take chances and combine different flavors to come up with exciting desserts. Experimenting is the best way to discover new dessert recipes. Remember that fruit trifle was only invented because somebody messed up a cake recipe. A culinary mistake can turn into something delicious and impressive which your family will like a lot.

Recipe for Lime Infused Mexican Strawberries

This delicious and easy dessert is perfect if you happen to enjoy Mexican dessert recipes. Feel free to substitute Grand Marnier or another orange liqueur for the Kahlua.

Also, you could use lemon juice instead of the lime juice. This is a light and refreshing dessert which is ideal if you are pressed for time or if you want something light and fruity rather than heavy.

You will need:

  • 1 lb hulled, sliced fresh strawberries
  • 1 teaspoon lime juice
  • 1 tablespoon Kahlua (Mexican chocolate liqueur)
  • 2 tablespoons white sugar

How to make it:

Combine all the ingredients in a bowl and let it stand for about ten minutes, or until the strawberries release their juice. Stir the dessert a couple of times during this time. Serve chilled, either alone or with whipped cream or a scoop of good quality vanilla ice cream on the side.

Healthier Desserts

It's been said that one way to remember how to spell "dessert" (contrasted with "desert") is by recalling that there are two s's in the word (instead of one), since we want more of desserts. It works, right? When we think of desserts, we tend to think of cakes, cookies, pies, puddings, and other creations that are typically sky-high in sugar and fat. Well, it doesn't have to be that way! When you have a sweet tooth after dinner, here are some alternatives that will prevent you from rotting out that tooth:

1. Baked Apples.

This is a naturally no-fat food that's bursting with flavor. From candied apples to apple pies, apples desserts historically get drowned in sugar. But this healthy dessert is bursting with flavor, and skimpy on calories and fat. Besides the goodness of the apples themselves, it can include other flavorful natural foods, including cinnamon, honey, and raisins.

2. Chocolate-dipped Strawberries.

You're probably thinking: "What's so healthy about chocolate?" Several clinical studies have proven that cocoa in chocolate is high in riboflavin. Riboflavin is a substance that's full of antioxidants, which protect our bodies from illnesses and diseases. But there's a catch: "dark chocolate" is the best option, since it has the highest content of cocoa.

3. Crispy Rice Treats.

Many of us grew up on the original version of these tasty desserts. The only problem is that they're loaded with calories, sugar, and fat! As adults we'd rather do without those sugary marshmallows and fatty butter. Brown rice syrup is a healthier alternative to the marshmallows, while peanut butter can replace the butter. Also, brown rice is preferable, since it contains more nutrients than white rice. You can make these snacks even healthier by adding some nuts or dried fruit.

4. Fruit Salad.

This is one of those desserts that have the potential to be healthy. Check that-fruit IS healthy in its natural state. But when we make fruit salads that drown the fruit in sugar and full-fat dairy products, we basically offset the nutritional value of the fruits. Instead, you could simply add two tablespoons of orange juice and lemon juice, to create some extra flavor. Also add some low-fat or fat-free plain yogurt, to add a serving of dairy foods.

5. Oatmeal Bars.

Did you know that oatmeal, like brown rice and brown flour, is a whole grain? Whole grains are healthier choices than refined grains. These oatmeal bars are even healthier when you add ingredients such as dried fruit.

6. Smoothies.

This is basically a healthy version of a shake. Shakes often include powdered mixes, full-fat milk, and other not-so-healthy ingredients. When sticking to the basics, a smoothie can be both refreshing and healthy! The essence of the healthy version includes blended fruit and low-fat milk or yogurt. Be cautious about adding other ingredients, as some of them can nullify the health benefits of a basic smoothie.

After lunches and dinners, many of us crave our just desserts. With these healthy choices, you can enjoy them without your conscience nagging you until your next weigh-in.

Enjoy Some Yummy Springtime Desserts That Have Been Past Down In Our Family

PEACH PIE
Preheat oven to 350 degrees
6 medium, ripe peaches 1/3 cup flour
1/4 cup butter (room temperature) 1 tbsp water
1 cup sugar 1 tsp nutmeg

Mix together butter, sugar, and flour until crumbly. Line a pie pan with pastry or use a store bought one. (Surprisingly quite good). Sprinkle 1/2 of the crumb mixture on the crust. Put peeled and sliced peaches on top of crumbs. Sprinkle with water and nutmeg. Put rest of crumbs on top of peaches and bake in preheated oven for 30 minutes or until crust is golden brown.

Note: Peaches can be peeled easier if you put them in very hot water for a few minutes.

This cake was born when my father decided to become a blueberry farmer. He had 100 bushes and sold many pints to the local fruit and vegetable stands, but there was always a surplus. This cake recipe is very good, as it is very thick, and the blueberries don't sink to the bottom of the pan. USUALLY.

It was my children's favorite when they were young.

BLUEBERRY CAKE
Grease and flour a 9x13 inch pan.
2/3 cup butter (soften) 1/4 tsp almond extract
1 3/4 cup sugar 3 cups cake flour (sifted)
2 eggs 1 1/4 tsp baking powder
3/4 tsp vanilla 1/2 tsp baking soda
1 1/2 cups buttermilk 1 tsp salt
1 pint blueberries

Cream together butter, sugar, eggs, vanilla, and almond extract with electric mixer. Sift together flour, baking powder, baking soda, and salt. Mix flour mixture into butter mixture alternating with buttermilk, starting and ending with the dry ingredients. Gently fold in blueberries and pour batter into prepared pan.
Bake in preheated oven for 45 to 50 minutes.

This is a universal recipe for frosting that most cooks have in their collection.

Frost with Butter cream Frosting

1 stick butter (room temperature) 3 to 4 tbsp milk or cream
1 box confectionery sugar 1 tsp vanilla extract

In medium bowl, combine butter, confectionery sugar, milk and vanilla extract. Beat with electric mixer. If needed adjust the amount of milk until frosting is the consistency you like. Frost cake in the pan and decorate with a few blueberries.

RHUBARB PIE
Preheat oven 375 degrees
1 1/2 cups sugar
1 tbsp flour 1/2 tsp salt
2 cups rhubarb (washed and cut into bite-size pieces) 2 eggs (well beaten)

Mix together sugar, flour, and salt. Add to the eggs and stir in rhubarb. Pour into pie crust. Top with top crust, and crimp. Brush with egg wash and sprinkle with a little granulated sugar. Bake in preheated oven for about 45 minutes, or until golden brown.

FLAKY PIE CRUST
4 cups flour 1 egg (slightly beaten)
1 tsp salt 1/2 cup ice cold water
1 tbsp sugar 1 tbsp cider vinegar
1 3/4 cups vegetable shortening

Mix together flour, salt, sugar,and vegetable shorting until crumbly. Beat remaining ingredients together and mix with flour mixture. Form into a ball and refrigerate at least 30 minutes before rolling out on a floured surface.

Strawberry Desserts

Strawberry Bread Pudding

Bread
Butter or margarine
Fresh strawberries
Sugar
Whipped cream

\"Pie Recipe\"

1. Toast several pieces of bread and butter them.
2. Line a baking dish, butter side down, with the slices of bread. Toast enough bread to cover the bottom of whatever baking dish you are using.
3. Cover the slices of toast with a generous layer of fresh strawberries.
4. Place a few pieces of crumbled toast among the strawberries.
5. Sift sugar all through and over the strawberries.

Bake at 350 degrees for 30 minutes. This dish is best when served cold with whipped cream on top.

Strawberry Tapioca

1/2 cup quick-cooking tapioca
1 1/2 cups crushed strawberries
1 cup sugar
1/2 teaspoon salt

1. Cook tapioca according to box directions.
2. Add salt, sugar, and strawberry pulp and cook 5 minutes more.
3. Serve cold with whipped cream and additional strawberries which have been sliced and sugared.

Strawberry Fruit Beverage

1 quart strawberries, crushed
Juice of 1 lemon
Juice of 1 orange
2 cups crushed pineapple
2 cups sugar
6 cups water

1. Cook sugar with half of the water until the sugar is dissolved.
2. Add it with the remaining water and the orange and lemon juice to the fruit which has been crushed and placed in a bowl.
3. Set aside in a cool place for 3 hours, stirring occasionally.
4. Strain into a pitcher or punch bowl and serve.

Add plenty of ice. Garnish, if desired, with extra halved strawberries. The pineapple may be either canned or fresh. If canned pineapple is used, substitute one cup of the juice from the can for one cup of water.

Strawberry Fruit Cocktail

1 cup diced canned or fresh pineapple
1 cup halved strawberries
2 oranges, divided into sections
2 tablespoons water
1/2 cup sugar
1/2 tablespoon lemon juice
Whole and half strawberries for garnishing

1. Combine the pineapple and the cupful of halved berries with half of the orange sections - from which the pith and membrane have been removed - the sugar, water, and lemon juice.
2. Cover and let stand in the refrigerator for several hours.
3. Arrange in small sherbet dishes, piling up the mixture in the center.
4. Decorate with the remaining sections of oranges and strawberries.

Vanilla and Rum Sauces Make Holiday Desserts Special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas dinner was always roast beef and Yorkshire pudding. Dessert was always plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom made plum pudding from scratch a few times, but it was so much work she finally bought Crosse and Blackwell pudding imported from England.

The plum pudding was served with warm vanilla or rum sauce. I did not like the rich pudding, so I only ate a spoonful. But I could have eaten an entire bowl of sauce. Mom also served apple pie with warm vanilla sauce. The combination of warm sauce and fresh pie from the oven was heavenly. With a couple of changes the vanilla sauce recipe becomes rum sauce or rum-raisin sauce.

I have lightened the recipe by using Splenda Blend for Baking instead of sugar and elminating the half cup of butter in the original recipe. However, I have added a tablespoon of butter for flavor. Warm vanilla and rum sauce turn simple cakes -- vanilla, apple, and spice -- into special desserts. Top frozen waffles with vanilla ice cream and sauce and you have one of the best desserts on the planet. Garnish with a twist of orange peel and fresh mint to make your holiday desserts more festive.

WARM VANILLA SAUCE

INGREDIENTS

1/2 cup Splenda Blend for Baking

2 tablespoons cornstarch

1/2 teaspoon light salt

2 cups hot water

1 tablespoon butter (no substitutions)

2 teaspoons pure vanilla extract

dash of freshly grated nutmeg

METHOD

Combine the Splenda Blend for Baking, cornstarch, and salt in a small saucepan. Whisk in hot water. Cook over medium heat, stirring constantly, until sauce has thickened. Remove from heat. Add vanilla extract and nutmeg. Makes 8 servings.

WARM RUM SAUCE

Omit the vanilla and nutmeg. Make the sauce and remove from heat. Add 2 teaspoons of rum extract.

WARM RUM-RAISIN SAUCE

Omit the vanilla and nutmeg. Add 1/4 cup raisins to the sauce and cook until thickened. Remove from heat and add 2 teaspoons of rum extract.
